An Apple Baked Right Into the Pancake

Slice an apple into rings, dip them in batter, and you get a pancake with the fruit built into the middle instead of piled on top. They cook in a few minutes, they hold their shape, and they are far easier than they look. Good for a slow weekend morning, good in a lunchbox, and good cold straight from the fridge.

What You'll Need

  • 2 large apples
  • 1 1/2 cups Heavenly Foods Original Mix
  • 2 eggs
  • 1 cup water, or sparkling water for a lighter batter
  • Butter, for the pan
  • Maple syrup, for serving

Instructions

  1. Peel the apples and slice them horizontally into discs. Cut out the center of each slice to create a ring.
  2. In a medium bowl, whisk together the Heavenly Foods Original Mix, eggs and water until smooth.
  3. Heat a pan or griddle over medium heat and add a little butter.
  4. Dip an apple ring into the batter, letting any extra drip off, and place it in the pan.
  5. Cook for 2 to 3 minutes on each side, until golden brown.
  6. Repeat with the remaining rings and batter, adding more butter to the pan as needed.
  7. Serve warm with maple syrup.

Make It Your Own

Swap the Original Mix for Cinnamon Apple and the whole thing leans further into fall. A firm apple holds its shape best, so reach for Honeycrisp, Granny Smith or Pink Lady.

Why You'll Love It

  • Protein-forward, from a yogurt-based mix rather than anything chalky
  • Fruit cooked into the batter instead of spooned on afterwards
  • Six ingredients and one pan
  • Just as good cold the next day
