Sweet and Savory, and It Feeds Eight

The McGriddle trick is sweet and savory landing in the same bite. This turns it into a casserole: sausage, cheese and eggs baked into pancake batter, with maple syrup over the top. Make it once on Sunday and eat it all week. It reheats properly, which is more than most egg bakes manage.

What You'll Need

  • 8 eggs
  • 1 1/2 cups cottage cheese
  • 1 cup milk
  • 1 1/4 cups Heavenly Foods Original Mix
  • 1 tsp baking soda
  • 1/4 tsp sea salt
  • 1 lb ground turkey breakfast sausage, fully cooked and crumbled
  • 8 oz shredded cheese
  • Maple syrup, for serving

Instructions

  1. Preheat the oven to 350 degrees F and lightly oil a 9x13 baking dish.
  2. In a large bowl, whisk together the eggs, cottage cheese, milk, Heavenly Foods Original Mix, baking soda and sea salt until well combined.
  3. Fold in the cooked crumbled sausage and shredded cheese until evenly mixed throughout the batter.
  4. Pour the mixture into the prepared baking dish and spread it into an even layer. Bake for 35 to 40 minutes, until the center is set and the top is lightly golden.
  5. Let it cool for a few minutes before slicing. Drizzle with maple syrup and enjoy that sweet and savory McGriddle flavor.

Macros (Estimated per serving)

  • Protein: 33 to 36g
  • Carbs: 17 to 20g
  • Fat: 22 to 26g

Numbers vary with the sausage and cheese you choose, and do not include the maple syrup.

Make It Your Own

Pork sausage or chopped bacon both work in place of the turkey. Pepper jack instead of cheddar gives it some heat. You can also mix it the night before, keep it covered in the fridge, and bake it straight from cold in the morning, adding about five minutes.

Why You'll Love It

  • Around 35g of protein a serving, without a protein powder in sight
  • One dish, eight servings, and it reheats without going rubbery
  • Sweet and savory in the same forkful
  • Assemble tonight, bake tomorrow
